Is a honda shadow 745 cc a good starter bike?
I've rode dirt bikes and a Harley 850 briefly (never crashed) and I'm wanting to get a daily ride. Think that's too much power?
'Too much power' is not a problem. Cruisers are not hot bikes. I don't think a 750cc cruiser is too big to learn on, and in that class of 'small-to-medium-sized' cruisers, the Shadow is by far the most popular.
750 - Shadow is a great starter bike. You'll love it.

That sportster you rode sits higher than the shadow since it is a standard and not a cruiser. If you did OK with that bike then you can handle the shadow with ease.
No, not too much power. Its just a heavy bike and you need street experience to control a heavy bike safely is the going logic. Too much power just adds another unsafe factor to the equation but a mid size V cruiser is pretty tame in terms of power imo.
