Just took my MSF course and was wondering if a Honda nc700x would make a good beginner bike? I'm 6,1 and 180lbs?

I just stole your bike and car lol

I'd go with it but remember you're a new rider. At some point you scratch the paint when you forget to put the side stand down. Honestly, you need to sit on it.

I sat on one at a dealer and thought it was a fairly tall, fairly heavy bike, but I'm 5' 10 with a 30 inch inseam. Try riding one, dude.

Start with a small displacement, fully manual, secondhand bike.

You're in the right ballpark with a mid-sized "standard" bike that's designed for commuting and light touring. There are other bikes in the same category with engines between 650 and 900cc. Before you get locked into one specific brand or model, I'd suggest you shop around to see what else is available. Check out your local motorcycle dealers and sit on a few bikes. Take one for a ride if you can. You might find one you like better.

Yes I started on a Ninja 250 and my second was a sport bike zx10 and I felt safer on the higher powered bike see video below and then decide

In the UK you have to learn (and pass your test) on max 125cc. There are reasons for it.
Begin on a 700cc bike and you have a high chance of death. People underestimate the power and overestimate their ability.
