Good Vintage/Classic Motorcycle for a Project?

I've been looking at multiple vintage Honda motorcycles to have as a project, in particular: CB 750, as well as NightHawk; I really liked the design of these "heavier" bikes in comparison to CB350. However, I never worked on motorcycles before and not really sure what to pick (in terms of how easy they are to fix and/or to find parts for). I found a similar post about the CB series thus the interest. But are there any other vintage motorcycles that any of you would suggest for a project? I was also looking at classic BMW bikes and the Russian Urals, but these are usually both rare and expensive. I would really appreciate any suggestions.

CBs are very popular with the restorer and cafe racer brigades, so have a look at Suzuki's GS range - 550 or 750 should fit the bill (the GS1000s are attracting the Wes Cooley/Yoshimura replica crowd). The engines are virtually indestructible and the electrics are far easier to sort out than an engine problem (a possibility with some CBs and Zeds).

My favorites are the XS 650 Yamaha vertical twin and the Honda CB 750. I have one of each. Mine are choppers. Parts are fairly easy to be had. Not that hard to work on either.
